Ginger-Soy Beef Tenderloin Kebabs

These Ginger-Soy Beef Tenderloin Kebabs are a delicious combination of marinated beef, fresh vegetables, and Asian-inspired flavors. Perfect for grilling on a warm day or for a flavorful weeknight dinner.

Ingredients:

  • 5 pounds beef tenderloin, cut into 1-inch cubes
  • 1/4 cup soy sauce
  • 3 tablespoons honey
  • 2 tablespoons grated fresh ginger
  • 3 cloves garlic, minced
  • 1 tablespoon sesame oil
  • 1 tablespoon rice vinegar
  • 1/2 teaspoon red pepper flakes adjust to taste
  • 1 red bell pepper, cut into 1-inch pieces
  • 1 green bell pepper, cut into 1-inch pieces
  • 1 red onion, cut into 1-inch pieces
  • Wooden skewers, soaked in water for 30 minutes

Instructions:

In a bowl, combine soy sauce, honey, grated ginger, minced garlic, sesame oil, rice vinegar, and red pepper flakes to create the marinade

Place the beef tenderloin cubes in a resealable plastic bag or shallow dish and pour the marinade over them

Seal the bag or cover the dish and refrigerate for at least 1 hour or overnight for best results, turning occasionally to evenly marinate the beef

Preheat your grill to medium-high heat

Thread the marinated beef cubes onto the soaked wooden skewers, alternating with the red bell pepper, green bell pepper, and red onion pieces

Grill the kebabs for about 8-10 minutes, turning occasionally, until the beef is cooked to your desired level of doneness and the vegetables are tender and slightly charred

Serve the Ginger-Soy Beef Tenderloin Kebabs hot, garnished with extra sesame seeds and sliced green onions if desired
