Gluten-Free Apple Cinnamon Muffins

These gluten-free apple cinnamon muffins are a delightful treat for those with gluten sensitivities. They are easy to make and require no mixer. The combination of fresh apples, cinnamon, and a hint of almond flour creates a moist and flavorful muffin thats perfect for breakfast or a snack.

Ingredients:

  • 1 1/2 cups gluten-free all-purpose flour
  • 1/2 cup almond flour
  • 1/2 cup brown sugar
  • 2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 1/4 cup melted coconut oil
  • 2 large eggs
  • 1/2 cup unsweetened applesauce
  • 1/2 cup almond milk
  • 1 teaspoon vanilla extract
  • 1 1/2 cups peeled and diced apples
  • 1/4 cup chopped walnuts optional
  • 1/4 cup raisins optional

Instructions:

Warm up the oven to 350F 175C and put paper liners in a muffin tin

Gluten-free all-purpose flour, almond flour, brown sugar, baking powder, baking soda, salt, and ground cinnamon should all be mixed together in a large bowl

Melt the coconut oil and add the eggs, applesauce, almond milk, and vanilla extract

Whisk the ingredients together in a different bowl until they are well mixed

Add the wet ingredients to the dry ones and mix them together just until they are mixed

Toss in the apple slices, walnuts if using, and raisins if using

Fill up about two thirds of the way to the top of each muffin cup with batter

After the oven is hot, bake the muffins for 18 to 20 minutes, or until a toothpick inserted into the middle comes out clean

Let the muffins cool for 5 minutes in the pan, then move them to a wire rack to cool all the way down
