One-Pot Red Wine Pasta
This one-pot red wine pasta is a simple yet elegant dish thats perfect for a cozy night in. The red wine adds depth of flavor while the vegetables and herbs create a rich sauce that coats the spaghetti beautifully.
Ingredients:
- 8 oz spaghetti
- 2 cups red wine
- 2 cups vegetable broth
- 1 onion, thinly sliced
- 3 cloves garlic, minced
- 1 can 14
- 5 oz diced tomatoes
- 1 tablespoon tomato paste
- 1 teaspoon dried oregano
- 1 teaspoon dried basil
- 1/2 teaspoon red pepper flakes
- Salt and pepper to taste
- Grated Parmesan cheese for serving
- Fresh basil leaves for garnish
Instructions:
Put onion, garlic, diced tomatoes, tomato paste, oregano, basil, red pepper flakes, salt, and pepper in a large pot
Add the red wine and vegetable broth
Bring the mix to a boil over medium-high heat, then lower the heat to a medium-low level
Simmer, stirring every now and then, for about 15 to 20 minutes, or until the pasta is done and the liquid is gone
Add grated Parmesan cheese and fresh basil leaves on top while the food is still hot
