Vegan Tofu Chicken Noodle Soup
A comforting vegan version of the classic chicken noodle soup, substituting tofu for chicken. This soup is nourishing, flavorful, and perfect for chilly days.
Ingredients:
- 1 block firm tofu, pressed and cubed
- 8 cups vegetable broth
- 2 carrots, sliced
- 2 celery stalks, chopped
- 1 onion, diced
- 2 cloves garlic, minced
- 1 teaspoon dried thyme
- 1 teaspoon dried parsley
- 1/2 teaspoon turmeric powder
- 1/2 teaspoon black pepper
- Salt to taste
- 8 oz
- cooked noodles of your choice
Instructions:
In a large pot, saut onions and garlic until translucent
Add carrots and celery, cook for another 5 minutes
Pour in vegetable broth, add thyme, parsley, turmeric, black pepper, and salt
Bring to a boil, then reduce heat and simmer for 15-20 minutes
Add cubed tofu and cooked noodles, simmer for another 5 minutes
Adjust seasoning if needed
Serve hot and enjoy
