Vegan Low Carb Keto Muffins

For people on a ketogenic or low-carb diet, these vegan low-carb keto muffins are a great treat. Theyre moist, fluffy, and full of nutty flavors, and theyre made from only plants.

Ingredients:

  • 2 cups almond flour
  • 1/4 cup coconut flour
  • 1/4 cup erythritol or preferred sweetener
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1 cup unsweetened almond milk

Instructions:

Warm up the oven to 350F 175C and put paper liners in a muffin tin

Put almond flour, coconut flour, erythritol, baking powder, and salt in a bowl and mix them together

Mix the dry ingredients together with the almond milk until everything is well mixed

Fill up each muffin tin cup about three quarters of the way to the top with batter

If you stick a toothpick into the middle of a muffin, it should come out clean after 20 to 25 minutes in a hot oven

First, let the muffins cool in the pan for a few minutes

Then, move them to a wire rack to cool completely
