Grain Salad with Blueberries, Hazelnuts, and Lemon Yogurt Dressing
This refreshing grain salad combines the nutty flavors of hazelnuts with the sweetness of fresh blueberries, all tossed in a creamy lemon yogurt dressing. Its a perfect balance of textures and tastes, making it a delightful and nutritious dish.
Ingredients:
- 1 cup cooked grains quinoa, bulgur, or farro
- 1/2 cup fresh blueberries
- 1/4 cup chopped hazelnuts
- 1/4 cup Greek yogurt
- 1 tablespoon fresh lemon juice
- 1 teaspoon lemon zest
- 1 tablespoon honey
- Salt and pepper to taste
- Fresh mint leaves for garnish
Instructions:
Put the cooked grains, fresh blueberries, and chopped hazelnuts in a large bowl
Fresh lemon juice, lemon zest, honey, salt, and pepper should all be mixed together well in a different bowl using a whisk
Add the lemon yogurt dressing to the grain mix and mix it all together
