Gluten-Free Chicken Parmesan
Ingredients:
- 4 boneless, skinless chicken breasts
- 1 cup gluten-free bread crumbs
- 1/2 cup grated Parmesan cheese
- 1 cup gluten-free marinara sauce
- 1 cup shredded mozzarella cheese
- 1/4 cup fresh basil leaves
- 2 tablespoons olive oil
- Salt and pepper to taste
Instructions:
Preheat your oven to 375F 190C
In a mixing bowl, combine gluten-free bread crumbs, grated Parmesan cheese, salt, and pepper
Coat each chicken breast in the breadcrumb mixture, pressing the crumbs onto the chicken to adhere
Heat olive oil in a large ovenproof skillet over medium-high heat
Once hot, add the breaded chicken breasts and cook until they are golden brown on both sides about 3-4 minutes per side
Pour the gluten-free marinara sauce over the chicken breasts and sprinkle with shredded mozzarella cheese
Transfer the skillet to the preheated oven and bake for 20-25 minutes, or until the chicken is cooked through and the cheese is bubbly and golden
Remove from the oven and garnish with fresh basil leaves
Serve the Gluten-Free Chicken Parmesan hot with your favorite gluten-free pasta or a side salad
