Lemon Thyme Mushroom Linguine
This linguine dish is bursting with the bright flavors of lemon and thyme, combined with earthy mushrooms for a deliciously savory pasta experience.
Ingredients:
- 8 oz linguine pasta
- 2 tablespoons olive oil
- 3 cloves garlic, minced
- 8 oz mushrooms, sliced
- 1 tablespoon fresh thyme leaves
- 1 lemon, zest and juice
- Salt and pepper to taste
- Grated Parmesan cheese for serving
Instructions:
Cook linguine according to package instructions until al dente
Drain and set aside
In a large skillet, heat olive oil over medium heat
Add minced garlic and saut for 1 minute until fragrant
Add sliced mushrooms to the skillet and cook until they release their moisture and become golden brown, about 5-7 minutes
Stir in fresh thyme leaves, lemon zest, and lemon juice
Season with salt and pepper to taste
Add cooked linguine to the skillet and toss everything together until well combined and heated through, about 2 minutes
Serve hot, garnished with grated Parmesan cheese
