Mudslide Marshmallows

Enjoy the tastes of a traditional mudslide cocktail with these delicious homemade marshmallows. These are ideal as a delightful present for loved ones or as a nice evening treat.

Ingredients:

  • 3/4 cup granulated sugar
  • 1/2 cup powdered sugar
  • 1/4 cup cornstarch
  • 1/4 cup unsweetened cocoa powder
  • 3 tablespoons unflavored gelatin
  • 1/2 cup cold water
  • 1/4 cup coffee liqueur e

  • 1/4 cup vodka
  • 1/4 cup Irish cream liqueur e
  • g
  • , Baileys
  • 1/4 teaspoon salt
  • 1 teaspoon vanilla extract
  • 1/2 cup mini chocolate chips
  • Powdered sugar, for dusting

Instructions:

In a bowl, combine the granulated sugar, powdered sugar, cornstarch, and cocoa powder

Mix well and set aside

In a separate bowl, sprinkle the gelatin over the cold water and let it sit for 5 minutes to bloom

In a saucepan, heat the coffee liqueur, vodka, and Irish cream liqueur over low heat until its warm but not boiling

Remove from heat

Add the bloomed gelatin to the warm liqueur mixture and stir until the gelatin is completely dissolved

Pour the liqueur and gelatin mixture into the bowl of a stand mixer

Add the salt and vanilla extract

Using the whisk attachment, beat the mixture on medium-high speed for 10-12 minutes, or until it becomes thick, glossy, and nearly tripled in volume

Fold in the mini chocolate chips gently using a spatula

Line a 9x9-inch 23x23 cm baking pan with parchment paper, leaving some overhang on the sides

Dust the parchment paper with powdered sugar

Pour the marshmallow mixture into the prepared pan and smooth the top with a spatula

Dust the top with more powdered sugar and let it set at room temperature for at least 4 hours or overnight

Once set, use the parchment paper overhang to lift the marshmallow slab out of the pan

Cut the marshmallows into squares and dust the edges with powdered sugar to prevent sticking
