Vegan Maple Cinnamon Sweet Potato Bread

This Vegan Maple Cinnamon Sweet Potato Bread is a delightful treat that perfectly combines the natural sweetness of sweet potatoes with the warm flavors of cinnamon and maple syrup. Its moist, tender, and perfect for enjoying with a cup of tea or coffee.

Ingredients:

  • 2 cups mashed sweet potato
  • 1/2 cup pure maple syrup
  • 1/4 cup melted coconut oil
  • 1/4 cup unsweetened almond milk
  • 1 tsp vanilla extract
  • 2 cups whole wheat pastry flour
  • 1 tbsp baking powder
  • 1/2 tsp sea salt
  • 1 tbsp ground cinnamon

Instructions:

Set the oven to 350F 175C and heat it up

Set the loaf pan aside after greasing it

The sweet potato mashed, maple syrup, coconut oil, almond milk, and vanilla extract should all be mixed together well in a large bowl

Mix the baking powder, ground cinnamon, sea salt, and whole wheat pastry flour together in a different bowl using a whisk

Slowly add the dry ingredients to the wet ones while stirring them together

Be careful not to mix too much

As soon as the loaf pan is ready, pour the batter into it and use a spatula to smooth the top

Put it in the oven and bake for 45 to 50 minutes, or until a toothpick stuck in the middle comes out clean

For 10 minutes, let the bread cool in the pan before moving it to a wire rack to cool all the way through

Cut it up and serve
