Chipotle Lime Tofu
This vegan dish, Chipotle Lime Tofu, is zesty and full of flavor. Its great for any event. Tofu is sauted in a sour mix of soy sauce, lime juice, and spices, and then it is baked until it is golden brown. This dish is flexible; you can eat it by itself or use it in different recipes.
Ingredients:
- 1 block extra-firm tofu, pressed and cubed
- 2 tablespoons olive oil
- 2 tablespoons soy sauce
- 2 tablespoons lime juice
- 2 cloves garlic, minced
- 1 teaspoon chipotle powder
- 1/2 teaspoon cumin
- 1/2 teaspoon paprika
- Salt and pepper to taste
- Fresh cilantro for garnish optional
Instructions:
In a bowl, mix olive oil, soy sauce, lime juice, minced garlic, chipotle powder, cumin, paprika, salt, and pepper
Add cubed tofu to the marinade and toss gently to coat
Let it marinate for at least 30 minutes, or overnight for best results
Preheat oven to 400F 200C
Place marinated tofu cubes on a lined baking sheet, making sure they are evenly spaced
Bake for 25-30 minutes, flipping halfway through, until tofu is golden and crispy
Garnish with fresh cilantro if desired
Serve hot with your favorite side dish or in tacos, salads, or bowls
