Lemon Cheesecake Mousse Parfait
Ingredients:
- 1 cup graham cracker crumbs
- 4 tbsp unsalted butter, melted
- 1 cup cream cheese, softened
- 1 cup powdered sugar
- 1 tsp vanilla extract
- 1 cup heavy cream
- Zest of 2 lemons
- 1/4 cup fresh lemon juice
- 1/2 cup lemon curd
- Fresh berries for garnish
Instructions:
In a bowl, mix graham cracker crumbs and melted butter
Press into the bottom of serving glasses to create the crust
In another bowl, beat cream cheese until smooth
Add powdered sugar and vanilla extract, continue to beat until well combined
In a separate bowl, whip the heavy cream until stiff peaks form
Gently fold the whipped cream into the cream cheese mixture
Add lemon zest and lemon juice to the mixture, folding until smooth and creamy
Layer the lemon cheesecake mousse over the graham cracker crust in the serving glasses
Spoon a layer of lemon curd over the mousse in each glass
Repeat the layers until the glasses are filled, ending with a dollop of lemon curd on top
Chill in the refrigerator for at least 2 hours to set
Before serving, garnish with fresh berries
