Mango Chilli Grilled Kauai Prawn
This Mango Chilli Grilled Kauai Prawn recipe uses the sweet taste of ripe mangoes and the spiciness of red chilies to make a tasty marinade for the juicy prawns. When you grill something, the smoky char makes the whole dish taste better. Great for a summer barbecue or a feast for seafood fans
Ingredients:
- 500g Kauai prawns, peeled and deveined
- 1 ripe mango, peeled and diced
- 2 red chillies, finely chopped
- 3 cloves garlic, minced
- 2 tablespoons soy sauce
- 2 tablespoons honey
- 1 tablespoon lime juice
- Salt and pepper to taste
- Chopped cilantro for garnish
Instructions:
In a bowl, mix together diced mango, chopped red chillies, minced garlic, soy sauce, honey, lime juice, salt, and pepper
Add the peeled and deveined prawns to the marinade
Let them marinate for at least 30 minutes in the refrigerator
Preheat the grill to medium-high heat
Thread the marinated prawns onto skewers
Grill the prawns for 2-3 minutes on each side or until they are cooked through and have nice grill marks
Remove the prawns from the grill and garnish with chopped cilantro
Serve hot with lime wedges and extra mango salsa on the side
