Simple Vegan Veg Fried Rice
A quick and easy vegan fried rice recipe that is minimally spiced, highlighting the natural flavors of vegetables and rice.
Ingredients:
- 2 cups cooked rice preferably jasmine or basmati
- 1 cup mixed vegetables carrots, peas, bell peppers, corn, etc
- 2 tablespoons soy sauce
- 1 tablespoon sesame oil
- 1 tablespoon vegetable oil
- 1 teaspoon minced garlic
- 1 teaspoon minced ginger
- Salt and pepper to taste
- Chopped green onions for garnish
Instructions:
Put vegetable oil in a big pan or wok and heat it over medium-high heat
Mix in the ginger and garlic powder for about 30 seconds, until the smell is nice
After you add the mixed vegetables, cook for about 34 minutes, or until the vegetables are just starting to get soft
Move the vegetables to one side of the pan and add the sesame oil to the other side
Use a spatula to break up any clumps of rice that you add to the pan after its cooked
Add the soy sauce to the vegetables and rice, and then mix them together
Keep cooking for three to four minutes, stirring every now and then, until everything is hot all the way through
Add pepper and salt to taste
Before serving, sprinkle with chopped green onions
