4 Easy Rotisserie Chicken Dinners
These 4 easy rotisserie chicken dinners are perfect for busy weeknights. Using a store-bought rotisserie chicken cuts down on prep time while still delivering delicious meals that the whole family will love.
Ingredients:
- 1 whole rotisserie chicken, shredded
- 1 cup cooked rice
- 1 can black beans, drained and rinsed
- 1 cup corn kernels
- 1 red bell pepper, diced
- 1 cup shredded cheddar cheese
- 1/4 cup chopped cilantro
- 1 teaspoon ground cumin
- 1 teaspoon chili powder
- Salt and pepper to taste
- 1 cup salsa
- 1 avocado, diced
- 1 lime, juiced
- 8 small flour tortillas
- 1/2 cup sour cream
- 1/4 cup sliced green onions
Instructions:
In a large bowl, mix together shredded rotisserie chicken, cooked rice, black beans, corn, red bell pepper, cheddar cheese, cilantro, ground cumin, chili powder, salt, and pepper
Preheat the oven to 375F 190C
Spread half of the salsa on the bottom of a baking dish
Spoon the chicken mixture onto each tortilla and roll it up
Place the rolled tortillas seam-side down in the baking dish
Pour the remaining salsa over the rolled tortillas
Cover the baking dish with foil and bake for 20 minutes, or until heated through
In a small bowl, mix together diced avocado, lime juice, and salt
Serve the enchiladas hot, topped with avocado mixture, sour cream, and sliced green onions
