Homemade Vanilla Pudding Cups Parfait

Indulge in the rich and creamy goodness of homemade vanilla pudding layered with whipped cream, granola, and fresh berries. This parfait is a delightful treat that combines velvety smoothness with satisfying crunchiness.

Ingredients:

  • 2 cups whole milk
  • 1/2 cup granulated sugar
  • 1/4 cup cornstarch
  • 1/4 teaspoon salt
  • 4 large egg yolks
  • 2 tablespoons unsalted butter
  • 2 teaspoons pure vanilla extract
  • 1 cup whipped cream
  • 1 cup granola
  • Fresh berries for topping

Instructions:

Sugar, cornstarch, and salt should all be mixed together in a medium-sized saucepan

Whisk the egg yolks and milk together in a different bowl

Slowly pour the milk mixture into the pan while whisking all the time until the mixture is smooth

Put the pan on medium-low heat and stir the mixture all the time until it gets thicker and starts to gently boil

Take it off the heat and mix in the butter and vanilla extract until everything is well mixed

Let the pudding cool down a bit

Put the pudding into individual cups or glasses

To keep a skin from forming, cover the top of each one with plastic wrap

Put in the fridge until its totally cold

Once the pudding is cold, put spoonfuls of vanilla pudding, whipped cream, and granola in each serving glass in a layer

Add more granola and fresh berries to the top of each parfait to make it more interesting

Enjoy Serve cold
