Paleo Pumpkin Pancakes

Ingredients:
- 1 cup almond flour
- 1/4 cup coconut flour
- 2 tsp pumpkin pie spice
- 1 tsp baking powder
- 1/4 tsp salt
- 1/2 cup pumpkin puree
- 3 large eggs
- 1/4 cup almond milk
- 2 tbsp maple syrup
- 1 tsp vanilla extract
- Coconut oil for cooking
Instructions:
In a mixing bowl, combine almond flour, coconut flour, pumpkin pie spice, baking powder, and salt
In another bowl, whisk together pumpkin puree, eggs, almond milk, maple syrup, and vanilla extract
Gradually add wet ingredients to dry ingredients, stirring until well combined and smooth
Heat a skillet or griddle over medium heat and lightly grease with coconut oil
Pour 1/4 cup of batter onto the skillet for each pancake
Cook until bubbles form on the surface, then flip and cook until golden brown on both sides
Repeat with remaining batter
