Gluten-Free Spinach Pie

This spinach pie that doesnt have gluten is tasty and good for you. Its great for a light lunch or dinner. The almond flour crust tastes nutty and is crunchy, and the spinach and dairy-free cheese filling makes each bite tasty and filling.

Ingredients:

  • 1 cup almond flour
  • 1/4 cup coconut flour
  • 1/4 cup tapioca flour
  • 1/2 tsp salt
  • 1/4 cup olive oil
  • 2 tbsp water
  • 3 cups fresh spinach, chopped
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1/2 cup dairy-free cheese, shredded
  • 3 eggs
  • 1/4 cup unsweetened almond milk
  • Salt and pepper to taste

Instructions:

Preheat oven to 350F 175C and grease a pie dish

In a mixing bowl, combine almond flour, coconut flour, tapioca flour, and salt

Add olive oil and water, mix until dough forms

Press dough into the bottom and sides of the pie dish to form the crust

Bake for 10 minutes

In a skillet, saut onion and garlic until translucent

Add spinach and cook until wilted

Remove from heat and let cool

In a separate bowl, whisk together eggs and almond milk

Season with salt and pepper

Spread the spinach mixture over the pre-baked crust

Sprinkle dairy-free cheese on top

Pour the egg mixture over the spinach and cheese

Bake for 25-30 minutes, or until the filling is set and the top is golden brown

Let cool slightly before slicing and serving
