Smores Stuffed Chocolate Chip Cookies
Ingredients:
- 1 cup unsalted butter, softened
- 1 cup granulated sugar
- 1 cup brown sugar, packed
- 2 large eggs
- 1 teaspoon vanilla extract
- 3 cups all-purpose flour
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1 cup semisweet chocolate chips
- 1 cup mini marshmallows
- 8 graham crackers, crushed
Instructions:
Preheat your oven to 375F 190C
Line a baking sheet with parchment paper
In a large mixing bowl, cream together the softened butter, granulated sugar, and brown sugar until light and fluffy
Add the eggs one at a time, beating well after each addition
Stir in the vanilla extract
In a separate bowl, whisk together the flour, baking soda, and salt
Gradually add the dry ingredients to the wet ingredients, mixing until just combined
Fold in the chocolate chips gently
Using about 1 tablespoon of dough, form a ball and flatten it in your palm
Place a few mini marshmallows and a pinch of crushed graham crackers in the center of the flattened dough
Wrap the dough around the marshmallows and graham crackers, sealing them in the center
Roll it back into a ball and place it on the prepared baking sheet
Repeat with the remaining dough
Bake in the preheated oven for 10-12 minutes or until the edges are lightly golden
Allow the cookies to cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely
