Ingredients:

  • 1 sheet frozen puff pastry, thawed
  • 3 ripe peaches, sliced
  • 1/4 cup granulated sugar
  • 1 tablespoon cornstarch
  • 1 teaspoon vanilla extract
  • 4 oz cream cheese, softened
  • 1/4 cup powdered sugar
  • 1/2 teaspoon ground cinnamon
  • 1 egg, beaten for egg wash
  • Powdered sugar, for dusting

Instructions:

Preheat oven to 375F 190C

In a bowl, combine sliced peaches, granulated sugar, cornstarch, and vanilla extract

Toss until peaches are coated

Set aside

In another bowl, mix cream cheese, powdered sugar, and ground cinnamon until smooth

On a lightly floured surface, unfold the thawed puff pastry

Roll out slightly to smooth creases

Spread the cream cheese mixture evenly over the puff pastry, leaving a border around the edges

Arrange the peach slices on top of the cream cheese mixture

Carefully roll up the puff pastry into a log, starting from one of the long sides

Seal the edges by pinching them together

Place the strudel on a parchment-lined baking sheet, seam side down

Brush the top of the strudel with beaten egg wash

Bake for 25-30 minutes, or until the pastry is golden brown and crisp

Remove from the oven and let cool slightly

Dust with powdered sugar before serving

Slice and enjoy
