Cauliflower Quinoa Cakes
Cauliflower quinoa cakes that are both tasty and good for you. They are crispy on the outside and soft on the inside. These cakes are full of healthy quinoa and cauliflower and would be great as a vegetarian meal or snack.
Ingredients:
- 1 cup quinoa, cooked
- 2 cups cauliflower florets, steamed and mashed
- 1/2 cup breadcrumbs
- 1/4 cup grated Parmesan cheese
- 2 green onions, finely chopped
- 2 cloves garlic, minced
- 2 eggs, beaten
- 1 teaspoon dried oregano
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 2 tablespoons olive oil
Instructions:
In a large bowl, combine cooked quinoa, mashed cauliflower, breadcrumbs, Parmesan cheese, green onions, minced garlic, beaten eggs, dried oregano, salt, and black pepper
Mix the ingredients until well combined
Form the mixture into small patties, about 2 inches in diameter
Heat olive oil in a skillet over medium heat
Place the quinoa cakes in the skillet and cook for 3-4 minutes on each side or until golden brown and crispy
Remove from the skillet and place on a paper towel to absorb any excess oil
Serve the cauliflower quinoa cakes warm, optionally with a dipping sauce of your choice
