South Your Mouth Chocolate Cobbler
Ingredients:
- 1 cup all-purpose flour
- 2 teaspoons baking powder
- 1/2 teaspoon salt
- 3/4 cup granulated sugar
- 2 tablespoons cocoa powder
- 1/2 cup milk
- 1/3 cup unsalted butter, melted
- 1 teaspoon vanilla extract
- 1/4 cup unsweetened cocoa powder
- 3/4 cup brown sugar
- 1 1/2 cups boiling water
Instructions:
Preheat your oven to 350F 175C
In a medium-sized mixing bowl, whisk together the all-purpose flour, baking powder, salt, granulated sugar, and 2 tablespoons of cocoa powder
Stir in the milk, melted unsalted butter, and vanilla extract until you have a smooth batter
Spread this batter evenly into a greased 9x9-inch baking dish
In a separate small bowl, combine the remaining 1/4 cup of unsweetened cocoa powder and the brown sugar
Sprinkle this mixture evenly over the batter in the baking dish
Pour the boiling water evenly over the top of everything
Do not stir; it will look a little strange, but trust the process Bake in the preheated oven for 30-35 minutes, or until the top is set and the cobbler is bubbling up through the middle
Remove from the oven and let it cool slightly
The cobbler will have a fudgy chocolate layer on the bottom with a cake-like layer on top
Serve warm with a scoop of vanilla ice cream or a dollop of whipped cream if desired
